What our fine dining room in Madrid does not do

Stating the limits early saves guests a wasted enquiry and saves us a difficult conversation at the door.

Weekday lunchtimes belong to a different project

From Tuesday to Friday at midday, the same premises operate as Barbecho Bar, a separate project with its own menu and its own booking channel. El Invernadero does not serve weekday lunches. Guests who find our address, walk to Ponzano 85 at two in the afternoon on a Wednesday and sit down expecting a tasting menu are in the right building at the wrong hour. One line adapts, the other does not

Two of our four menus form the Vegetalia line, plant-based cooking that can be served fully vegan or vegetarian when requested at the time of booking. The other two form the Gastrobotánica line, which is omnivorous and includes meat, fish and shellfish, and which is not adapted under any circumstances. This matters more than it may appear. A guest who books the wrong line arrives at a set-menu kitchen with no alternative available, and a dining room built on a single fixed sequence cannot improvise a substitute at the table. A dining room for diners, and nothing beyond that

The house does not host private events, does not offer catering and does not deliver. Bookings come through CoverManager, and the alternative to a table is a Green Experience gift card, our own gift voucher, which the recipient redeems as a booking here. Anyone planning a corporate itinerary or a private hire will need to look elsewhere; what we do is serve a set number of covers, twice a night, in a room on Ponzano.
