Do I have to say I am vegan in advance?
Yes. The vegan or vegetarian version of Vegetalia is prepared only when the request is made at the moment of booking. Once you are seated the menu is already built, so a late request cannot be honoured.
Can the Gastrobotánica menu be made vegan?
No. Gastrobotánica is conceived as an omnivorous menu and it does not adapt. If everyone at your table eats plant-based, book Vegetalia or Vegetalia Experience.

We are at Calle de Ponzano 85, 28003 Madrid, in the Chamberí district north of the city centre. Under the name El Invernadero we serve dinner Tuesday to Saturday and public holidays at 19:00 and 21:30, plus lunch at 14:00 on Saturdays and public holidays. There is no weekday lunch service.
The vegan question has a precise answer in this house, and its name is Vegetalia. It is our vegetable line, at 158 € per diner, with a longer version, Vegetalia Experience, at 218 € per diner. Both are tasting menus, and both can be served entirely free of animal products when the request reaches us at the moment of booking. The timing is the whole point: a vegetable dish that has to give up its dairy or its egg is rebuilt from the base, and the kitchen needs that information before the day of service, not at the table.

For a vegan traveller who is used to arriving at a restaurant and negotiating substitutions with a waiter, that changes the evening entirely. You are not asking the kitchen to work around you; the kitchen was already working in that direction. The price is 158 € per diner, and the vegan option must be indicated when you reserve, not once you are seated.
Vegetalia Experience, 218 € per diner, for a longer vegetable sequence
Vegetalia Experience is the extended version of the same line, at 218 € per diner, and it follows the same rule: it is served 100 % vegan if you say so at booking. It suits the diner who has travelled to Madrid specifically for this table and wants the fullest reading of what vegetables can do at this level, rather than a shorter introduction. Both formats belong to the same culinary language, so the decision is one of length and depth, not of ambition.
One warning worth reading before you reserve
We keep two lines in the house, and only one of them is vegetable. Gastrobotánica is our omnivorous menu, with meat, fish and shellfish, and it cannot be adapted to a vegan or vegetarian version under any circumstances. If you book that line expecting plant-based cooking, there is no way to correct it at the table. The vegan diner should reserve Vegetalia or Vegetalia Experience and state the vegan option in the reservation itself. We also work without an à la carte offer: the house serves tasting menus only, which is precisely why the choice you make when reserving carries so much weight.

Planning a vegan dinner into a trip to Madrid
Travellers building an itinerary usually face the same problem: the starred tables go into the calendar first, and the vegan question is left to be sorted out later, when the seat is already confirmed and the kitchen has little room to manoeuvre. What we do not do, said plainly
We are a restaurant and only a restaurant: no private events, no catering and no delivery. There is no à la carte offer either, so every guest at the table is following one of the tasting menus.
